Scones

Agate Cove Recipes : Scones

 

This recipe yields 12 scones, and it scales
up readily.
Ingredients
3 cups white flour
1 Tbsp baking powder
1/2 pound unsalted butter, softened
1/4 cup sugar
3 eggs
1/3 cup buttermilk
Fillings (Choose one or try your own!)
1 cup craisins or raisins
1 cup strawberries, diced
1 cup blueberries
1 cup peaches, diced
1 cup each sliced almonds and coconut
Directions
Mix flour and baking powder in a bowl, and set aside. In a large bowl,
beat the butter until creamy. Add the sugar, and beat until pale and
fluffy. Add the eggs one at a time, beating after each. Add the flour
mixture, mixing only until blended. Add the buttermilk; mix only until
blended. Sprinkle the filling on top of the batter, and fold it in.

Using a large scoop, place mounds of dough on an ungreased
baking sheet about 2 inches apart. Bake at 350 degrees for about 30
minutes on top rack of oven (no convection) until a light golden color
on top. Cool on a wire rack. Yields 12 scones.
