Salsa Fresca

Agate Cove Recipes : Salsa Fresca

 

We serve this salsa along with breakfast
burritos and omelets. The aroma is intense, as is the flavor.
Ingredients
6 tomatoes, large, shaken free of seeds, pulp
4 cloves garlic
1 Anaheim or California green chili, seeded
1 white onion, diced
1 red onion, diced
2 Tbsp olive oil
2 limes, juiced
1 lemon, juiced
1/2 bunch cilantro, chopped
2-3 Serrano chiles, seeded and diced
Directions
Chop everything finely and combine in a bowl. Optional: add jalapenos
or habaneros to increase the heat! Yields 5-6 cups.
