Corn Muffins

Agate Cove Recipes : Corn Muffins

 

This recipes yields a dozen muffins.
Dry Ingredients
1 cup white flour
1/3 cup corn meal
2 tsp baking powder
1/3 tsp salt
1/3 cup sugar
Wet Ingredients
1/4 cup canola oil
2 eggs
3/4 cup buttermilk
2/3 cup drained corn
2 Tbsp melted butter (add just before mixing)
Directions
Make a well in the center of the dry ingredients. Add the wet ingredients
all at once to the dry mixture, stirring until moistened. Batter should
be lumpy. Fill greased muffin pans two-thirds full. Bake at 350 degrees
for 20-25 minutes. Yields 12 muffins.
