Agate Cove Recipes : Corn Muffins
| This recipes yields a dozen muffins. | |
| Dry Ingredients | |
| 1 cup | white flour |
| 1/3 cup | corn meal |
| 2 tsp | baking powder |
| 1/3 tsp | salt |
| 1/3 cup | sugar |
| Wet Ingredients | |
| 1/4 cup | canola oil |
| 2 | eggs |
| 3/4 cup | buttermilk |
| 2/3 cup | drained corn |
| 2 Tbsp | melted butter (add just before mixing) |
| Directions | |
| Make a well in the center of the dry ingredients. Add the wet ingredients all at once to the dry mixture, stirring until moistened. Batter should be lumpy. Fill greased muffin pans two-thirds full. Bake at 350 degrees for 20-25 minutes. Yields 12 muffins. |
