Blueberry Crepe Filling

Agate Cove Recipes : Blueberry Crepe Filling

 

This recipe makes enough to fill 12 crepes.
Ingredients
6 cups blueberries, fresh or frozen
1 Tsp lemon juice
3 Tbsp honey (or sugar)
1 Tbsp cornstarch, dissolved in 1 Tbsp water
2 cups blueberries, fresh
Directions
Put blueberries in a pan with all of the other ingredients.
Bring to a boil, stirring, and cook on medium heat until the berries have
popped and the mixture has thickened. This takes 20-30 minutes.

When serving, stir in the remaining 2 cups of blueberries
(fresh or canned), and cook only long enough to warm the berries, about
1 minute.
