Agate Cove Recipes : Blueberry Crepe Filling
| This recipe makes enough to fill 12 crepes. | |
| Ingredients | |
| 6 cups | blueberries, fresh or frozen |
| 1 Tsp | lemon juice |
| 3 Tbsp | honey (or sugar) |
| 1 Tbsp | cornstarch, dissolved in 1 Tbsp water |
| 2 cups | blueberries, fresh |
| Directions | |
| Put blueberries in a pan with all of the other ingredients. Bring to a boil, stirring, and cook on medium heat until the berries have popped and the mixture has thickened. This takes 20-30 minutes. When serving, stir in the remaining 2 cups of blueberries |
